Soil type : soil of volcanic origin, loose and dry, with a good structure, essentially tufaceous and with the typical color of pozzolanic soils, also endowed with a good presence of minerals.

Harvest period : first ten days of September.

Harvest : done by hand in crates.

Yield of grapes per hectare : 100 quintals / Ha

Vinification : after manual harvesting and destemming, soft pressing is carried out, extracting only 50% of the must and fermentation with indigenous yeasts begins without adding sulfur. The refermentation takes place in the bottle, thanks to the residual sugars and yeasts, according to the ancestral method without a subsequent degorgement. The wine rests on the lees all winter and is then put on the market without added sulphites

Alcoholic content : 11.5% Vol.

Recommended serving temperature: 10 ° -12 ° C.

Recommended pairings : very versatile wine, ideal as an aperitif, to accompany a platter of cured meats and cheeses, fish first and second courses and to experiment with dry pastries

Organoleptic characteristics : pink in color with slightly veiled violet reflections, with a soft and light foam. The bouquet is reminiscent of raspberry, currant, small berries, hints of citrus and the typical hints of bread crust given by the yeasts. On the palate it has an exuberant and lively attack, with a pleasantly fruity sip, which closes with savory and refreshing sensations.
